Well loves, I attempted my first homemade enchiladas andddddd I have to say… I impressed myself! haha I had no idea how this was going to turn out, in fact I was kinda nervous. I had this great idea to invite family over for dinner to try my creation… so my fingers were crossed.
The truth is this recipe was quite easy, I started with my go to Mexican shredded chicken as the base and thought it would be the perfect filling for the enchiladas. I have found the secret to cooking is to not be afraid, try different things and trust your instincts. Thats how I came up with this recipe… Initially, I was following a different recipe and then quickly realized I didn’t have any of the ingredients it called for. So I winged it and this is what came up with! It was a yummy mistake. Especially when your boyfriend says “This taste exactly like the enchiladas I order at a restaurant!” That was the biggest compliment!
